Not only delicious cuisine and fresh food are the key to success among visitors, but also a pleasant atmosphere is needed, so the unique interior of a cafe is an important task for every establishment owner. Guests often stay where the atmosphere encourages eating, where they want to spend an evening with family, a holiday, or just sit at lunchtime. That is why the right design is the key to the heart of any, even the most avid gourmet.

Bringing an idea to life

Like styles for apartments, there are a great variety of cafe design projects. Just look at photos of travelers - each country has its own food traditions, many of which have been borrowed by food establishments. Regardless of the façade, the inside of the hall can be designed as required by the author’s imagination. By using correct design you can express the main theme and style of the institution, its focus on one or another target audience and even pricing policy.
Before you start working on bringing your plans to life in a cafe, you need to:

  • Clearly plan the location seats, wardrobe, technological area and kitchen. Of particular importance here is not only the unusual interior, but also its functionality and convenience for both visitors and staff.
  • Pay special attention to the furniture: it should support the general background or be in contrast with it. Convenience is also important here.
  • Choose the right curtains, mirrors, paintings, photos that will create an atmosphere of comfort and emphasize the individuality of the restaurant or cafe.
  • You can’t ignore other rooms, because in addition to the hall, visitors visit the toilet room, and in many cafes there are hookah bars and other rooms where clients have access.
  • Correctly format bar counter if available. It should stand out and be, if possible, equally accessible to guests sitting both closer to it and further away.

It’s not difficult to decorate a restaurant in an unusual way, since modern construction market offers various options of materials with the help of which the most bold ideas. To generate a project, they involve professional designers, and the work is carried out by construction teams who will do everything on time and at a high level.

Unusual cafe interior styles

The most creative, perhaps, can be considered loft style. You can often see photos of cafes where the main element of the room is brick walls. The birthplace of this style is New York, and it arose, oddly enough, due to a banal lack of money for improvement. In our country, the loft appeared recently, before Brick wall it was simply not perceived and was considered unfinished. Now it is popular all over the world and is considered unusual and trendy.

A positive quality of this style is the savings on finishing materials. It is enough to simply place a cafe in a brick building, lightly cover the walls with matte varnish or bright paint for greater effect, and add individual details to the design that accentuate attention.

Design projects in the oriental fusion style are also interesting. Both folklore motifs and industrial simplicity combined with thematic accents (fabrics, tiles, lamps) can be present here. Lighting plays a major role here - these are not ordinary lamps, but creative light sources in the Asian style. This is how you can decorate a cafe specializing in Caucasian or oriental cuisine.

Its description is quite simple: modernity in everything. This includes furniture, materials, bold color combinations, and lighting.

Advice! The use of a large number of mirror and glossy surfaces will add special chic.

Choosing furniture

Any project requires the presence of furniture, and it should not only be beautiful and suitable for the interior, but also have functional features. First of all, convenience for visitors is important, so that they do not have the desire to quickly finish their meal and leave, but want to stay longer. The furniture of each establishment is different, depending on the theme of the restaurant or cafe.

You need to choose the price category of the cafe as it is intended for middle class people who have the opportunity to eat not at home but also individually and presentably. Every person discovers incredible things and finds interesting places to spend time. In order for the cafe to become just such a place where it will be pleasant to come and spend some time, it is necessary to clearly and correctly create a conceptual design for the cafe. And then let it be a place for meetings and dates, a place to refresh yourself in order to...

Choice general style apartments are not an easy task. Often, owners cannot decide on the exact design direction they would like to see. In this case, modern images come to the rescue, adapting to the current pace of life. Having no clear frames and boundaries, denying outdated rules, they open up new perspectives for space planning. One of these styles is fusion. Literally, from English “fusion” is translated as merging, mixing. This direction allows you to combine, at first glance, incompatible household items, maintaining harmony between them.

Fusion design

At the end of the 90s, fusion began to displace strict interior images that established strict rules for organizing the space of premises. Replacing practical and functional minimalism, it gave freedom of action and thought. The main rule of this design direction was the phrase “combine the incongruous.” In the fusion style, it is not only acceptable and permitted, but necessary to “mix” textures, materials and decor.

Origins of fusion style

The history of fusion begins in 1970. It appears not only in the field of design, but in other areas: music, dance, cinema and others. Style penetrated with lightning speed into all areas of human life, imbuing everything with its charm.

Designers from America were the first to try the fusion style in the interior. Creating bold and eccentric interiors, they combined completely diverse styles: classic and ethnic, high-tech and baroque, Gothic and Renaissance, modern and chalet. Filling the space with harmony and tranquility. A striking example of those samples is the combination of a leather sofa and, standing next to it, a table decorated with mirror shards. In the 90s, the concept of “fusion style in the interior” came into common use. The style began to be used everywhere: in hotels, cafes, restaurants, homes. At the same time, each location, made in the direction of fusion, remained absolutely individual. Because of its limitlessness, the style is still relevant today.

Where to start creating an interior in fusion style?

Fusion style requires a certain vision of space. A designer must have creative and bright thinking, an impeccable sense of style, but at the same time have a sense of proportion. This direction is not design rules, but a special perception of the room and things. Conventionally, you need to be able to see lightness and ease in classicism, and an unusual twist in minimalism. You also need to understand that you should not set clear boundaries and zones of space. Fusion is a bright, but at the same time light style. He must maintain charm and cheerfulness.

What colors are used in fusion style?

If you look at color palette interior design, made in the fusion style, creates the impression of pleasant chaos. This is exactly what designers achieve by carefully selecting paints. Neutral shades are most often used as background colors: white, gray, beige or brown. They can be used individually or create a mix. Using background colors, the ceiling, walls and floor are decorated. For color accents, it is permissible to use both pure, uniform paints and patterns and paintings. Juicy accents look as fresh and bold as possible against a background of pastel colors. The colors of the rainbow or their brighter shades are often used.

The most popular patterns

Fusion is distinguished by the abundance of patterns used, calmly harmonizing with each other. This approach creates a peculiar feeling of creative disorder. To give the interior individuality and brightness, to emphasize its unique character, the following patterns are used.

  1. Ethnic and folk motifs will dilute the atmosphere with pleasant colors.
  2. Checkered or striped patterns will add rigor.
  3. Geometric drawings. For example, squares, triangles, diamonds and ovals.
  4. Floral prints will add romanticism to the space.
  5. Images of animals will enliven the room.

Materials used in fusion style

Fusion allows the use of various types of finishes and decor. It is important to understand that textures should not just be combined, but complement each other not only visually, but also in terms of tactile sensations. Let's say the wall looks like fresh, young, green grass, then when you touch it it should be perceived as a pleasant lawn. A surface that visually resembles sand should be tactilely felt by small grains of sand.

The most popular types of finishes

  1. Bamboo, cork, paper wallpaper.
  2. Natural or artificial stone.
  3. Decorative plaster.
  4. Natural wood.
  5. Laminate.
  6. Natural fabrics.
  7. Glass and mirror surfaces.

Decoration of walls, ceiling and floor

There are no restrictions when decorating walls and ceilings. Wood, glass coverings, ceramic tiles and more are often used. Basically, the decor of the walls and ceiling depends on the other components of the interior. So if you are going to focus on furniture and accessories, then the walls and ceiling should be left dim and plain. It is also possible to make the main color accent on the walls and ceiling. In this case, when choosing utensils and small things for the home, you should focus on calmer colors. This method of creating a room will allow you not to overload the space with color, or make it tacky and unpleasant.

When choosing a floor design, they most often focus on practicality and convenience, choosing materials that will last a long time. Most often they use tiles, laminate or linoleum.

Furniture in fusion style: functionality and convenience

When selecting furniture, you should not opt for sets or sets of several items combined in the same style. So in the living room you can place utensils made not just from different materials, but made in different eras. For example, you can combine minimalist glass tables with armchairs made in ethnic motifs. The whole point of decorating a space with furniture is a combination of beauty, brightness and functionality.

For the kitchen, you can choose several different decor options. For example, choose kitchen set in Baroque style. Add a high-tech table to it. Place absolutely at the table different chairs. At the same time, keep the same note in all selected items. For example, metal finish small details.

Introduction

The relevance of the ecological style lies in the fact that you need to decide on the concept of the cafe, modern trends, and modern equipment. You need to choose the price category of the cafe, since it is intended for middle-class people who have the opportunity to eat not at home, but also individually and presentably. Consumers would like to talk to knowledgeable person, who can give competent advice, knowledgeable about dishes, which he can present beautifully. It makes it stand out from the crowd and thus attracts visitors: natural decoration, food.

The topic of the final qualifying work is “Design project of a cafe in fusion style using environmental materials.” Every day something new and interesting comes into our lives. Changes are occurring in all areas: medicine, science, technology, etc. Every person discovers incredible things and finds interesting places to spend time. And so, a cafe entered people's lives. Particular attention is paid to the interior of the cafe. A brief description of various interior styles is given. The color scheme of the cafe design, the influence of the design on the holistic perception of the cafe, as well as the influence of the color scheme on the perception of this object are considered.

In order for the cafe to become just such a place where it will be pleasant to come and spend a little time, it is necessary to clearly and correctly create a conceptual design for the cafe. And then, even if it will be a place for meetings and dates, a place to refresh yourself, to take a break and relax, or to meet with friends and have fun, but people will return there again and again.

Any coffee shop or cafe must have a kitchen area, a hall for visitors (there may be two halls - separately for smokers and non-smokers), an area for staff, as well as toilet rooms. All this must be taken into account when developing the layout of the cafe. The hall for visitors should have a bar counter, a refrigerator display case, tables, and chairs for visitors. To separate the smoking and non-smoking rooms from each other, you can use different types of furniture, partitions, columns, walls and other interior elements. A particularly cozy atmosphere is created by dim lighting; together with the aroma of coffee, it creates a pleasant environment for communication.

Today, cafes and coffee shops are very popular. More and more often, such places are becoming the main place not only for weekday relaxation, relaxation during the working day at lunch, but also for weekend relaxation, to meet and chat in a cozy and relaxed atmosphere.

Chapter 1. History of the development of the cafe

1.1 History of the cafe

Cafe (from the French Cafe; literally "coffee") is a public catering and recreation establishment, similar to a small restaurant, but with a limited range of products compared to a restaurant, also, possibly, with self-service, recreation for consumers with the provision limited range compared to a restaurant. Introduced in Russia in 2007, GOST R 0762-2007 “Public catering services. Classification of public catering establishments” defines the difference between cafes and other public catering establishments: restaurants, bars, canteens, snack bars, fast food establishments, buffets, cafeterias, coffee shops, culinary stores . According to this document: “A cafe is a public catering enterprise providing food and (or without) public catering products, selling branded, custom-made dishes, products and alcoholic and non-alcoholic drinks”

Many of us have noticed that the words “coffee” and “cafe” are very similar to each other. And this is not a mere coincidence, because back in the Middle Ages, a drink believed by many to be divine, three thousand years old, served as an impetus for the development of public institutions such as coffee shops. The first of them was opened in the Dutch town of Livorno.

The novelty became so popular that by the end of the seventeenth century there were similar cozy corners in almost every country in Europe, and in some there were a huge number of them. In almost all establishments similar type the process of making coffee was considered a mysterious process that took place in mysterious twilight. The aroma of this enchanting drink spread like an elusive haze far along the city streets. Nowadays, not every coffee shop can boast of carefully preserved traditions of coffee making secrets.

Already at the time of the appearance of the first coffee establishments, they were favored by the nobility and intelligentsia. Here you could always sit, discuss philosophical issues, meet friends, find out the latest city news, gossip and drink a cup of enchanting drink. Examples of such clubs are a music or literary cafe. In one of them the Royal Oxford once arose scientific society.

The first mentions of such clubs in Russia appeared at the beginning of the nineteenth century. Since their opening, they have become a favorite place for the creative elite. A characteristic and distinctive feature of Russian coffee houses are additional services - chess, billiards, reading and discussion of newspaper articles. Of course, today you rarely see a group of people studying a newspaper together over a cup of coffee, but modern public institutions offer a wider range of services, food and drinks. Today you can easily order a cup of tea in a coffee shop, or order brewed coffee in a tea shop. Unlike old coffee shops, modern ones are very diverse in design. They amaze with their unusual solutions, color schemes, transformations, reincarnations. Recently, an interesting trend has been noticed - coffee shops are cozy corners, where it is quiet and calm, and in the evening there are sports bars where you can safely order beer and watch a football match.

Many institutions today offer such a convenient addition as a wi-fi access point, allowing students or business people to check their email or find useful information online. Such coffee shops often attract freelancers - people who work via the Internet. Sometimes people spend the whole day in cafes without noticing how time has flown by. In the evening, many of them will experience drive and excitement - the broadcast of sporting events begins on large screens installed in the coffee shop. Today it is no longer possible to imagine life without such fun and comfortable establishments. I wonder what we would do without a wonderful aromatic coffee drink?

The history of the cafe - this is the subject of a dispute between Italy and France. The cafe first appeared in Italy, and only then was it brought to France. But the name of the first Italian cafe has not been preserved. However, in Constantinople there were street coffee shops already in 1550. Cafe "Procope" (French Le Procope) - considered the oldest restaurant in Paris, located in the Latin Quarter, on Ancienne-Comédie street (rue de l "Ancienne-Comédie), next to crossroads of the Odeon. It became a discussion center for writers and philosophers during the Enlightenment and became the first literary café.

In 1686, the Sicilian Francesco Procopio dei Coltelli opened a cafe on Rue des Fossеs Saint-Germain (today's Rue de l'Ancienne Comеdie). The opening of the first cafe in Paris contributed to the fact that coffee establishments soon spread throughout Paris. In addition to coffee, it also served Another new product is ice cream.

Origin of the name - Cafe The word “cafe” is not in vain similar to “coffee”, because cafes were transformed coffee houses, which were called first “coffee shops” and then “cafes”. They originated in the East.

Cafe Restaurant

Now a cafe-restaurant is defined as a cafe in which the client is offered additional alcoholic drinks and lunch. During the day, this establishment has a quick menu with... good prices. And in the evening the halls are transformed, the menu is expanded, and a program is organized.

History of the cafe

Chinese coffee shops and tea houses. In fact, restaurants arose a long time ago. The history of their creation goes back to the 13th century. Chinese tea and coffee houses in Hangzhou, the cultural capital of China at that time, trying to attract customers and somehow stand out from competitors, increased the luxury of their establishments, diversified the menu, and made them a real place of relaxation.

It’s interesting that the words “cafe” and “coffee” are not coincidentally similar. Coffee contributed to the development of such types of public institutions as cafes, and in particular, coffee shops. The official history of coffee goes back about 3000 years, when the first coffee shop was opened is unknown, it is only known that the birthplace of the cafe is the East, but the history of European coffee shops dates back to 1651. It was then that the first coffee shop opened in Livorno, Holland. The innovation successfully spread throughout Europe and by the end of the 17th century, many establishments were opened in every European country, where twilight and the aroma of coffee reigned, making the process of making coffee a mysterious ritual. Nowadays, a rare cafe in Tushino can boast of preserved traditions of preparing this wonderful aromatic drink. It will not be a discovery that cafes were chosen by the nobility, and over time, cafes became clubs of interests: a literary cafe, a music cafe, and even the Royal Scientific Society arose from the Oxford Coffee House. But the main type of service of such cafes remained coffee.

In Russia, the first cafe appeared at the beginning of the 19th century in Moscow and this place was immediately chosen by the creative elite. It is characteristic that the first Russian cafe immediately began to provide additional services - billiards, chess, even simple reading and subsequent discussion of newspaper news.

Modern cafes have moved away from the traditions of coffee shops and provide a more expanded range of products. various kinds drinks and products. So, in a modern teahouse you can order a cup of coffee, and drink tea in a coffee shop. Both the interior of modern cafes and its transformations are varied. Thus, the SZAO cafe is a restaurant and cafe during the daytime, and a sports bar in the evening. The owners of such establishments try to take into account the tastes and anticipate the desires of each guest; there is a fierce struggle for each visitor.

Cafes with wi-fi are not new now - such amenities are popular and in demand among students and Internet workers. The latter, in order not to be distracted by household chores, prefer a table in a cafe in their own apartment, where, at the first request, they will be fed and watered in every sense of the word. By the evening, lingering visitors to wi-fi cafes turn into passionate fans, because the TVs hanging on the walls of such establishments begin broadcasting sports competitions.

Cafes can be closed or open. Indoor cafes resemble something like a gazebo with a roof. Many indoor cafes are not much different from indoor cafes: they have “walls” or are located under a special canopy, which makes them undoubtedly more convenient for visitors. In such cafes, visitors feel no worse than in closed indoor cafes. Such cafes are ideal for hot weather, they are cool, and they do not require the use of air conditioning: people are both in the fresh air and feel as comfortable as indoors. In addition to traditional cafes located indoors, summer (street) cafes have always been very popular. Such cafes usually occupy a small area, but summer cafes can be quite large and include several utility rooms. Summer cafes can operate independently and be located along or close to thoroughfares or be located next to a stationary cafe. The choice of location for open air is of great importance. summer cafe: it should be easily accessible, passable, clearly visible to people passing by. Opposite the summer cafe, it is desirable to have parking for visitors with cars. In most cases, the premises for a cafe are rented, although the construction of a special pavilion is not excluded. Square trading floor depends on the number of seats, which can vary from 5-6 tables (each table is usually designed for 4 people) to 15 or even more.

For a summer cafe, just like for other types of cafes, it is necessary to have utility room and good communications (water supply, sewerage, electricity). The equipment in summer cafes, as a rule, is limited to the presence of seats with tables for visitors, a refrigerator counter, additional refrigerators with drinks and ice cream, a refrigerator for storing food, a display cabinet with food, a cafe brewing machine, and a microwave oven.

Different types of summer cafes are designed for different target audiences and, therefore, use appropriate management. Essentially, a summer cafe is a small enterprise with a friendly and relaxed atmosphere, striving to attract and retain visitors of various age groups. There are also closed evening summer cafes, where only adults and young adults have access. As a rule, summer cafes attached to the main cafe operate separately: they have their own buffet, their own cash register, but the kitchen can be located indoors in the main cafe, which is why such cafes have a fairly wide range of dishes offered. This is the main difference between such cafes and those summer cafes that operate on the streets; each summer cafe has its own system of serving visitors. There are summer cafes, the service of which is not much different from the service of large cafes and restaurants: tables here are served by waiters who present the menu, take orders, serve dishes and clear tables. Small summer cafes practice a minimum service or self-service system. In such cafes there is usually no menu, and the prices and names of the dishes offered are presented on price tags, however, there are several waiters who remove used dishes from the tables. And yet, recently, all summer cafes have used a menu-based service system, which is convenient for visitors and allows waiters to better control the situation in the cafe. Ordering food and serving tables in summer cafes follows standard rules. Visitors occupy a free table, the waiter's task is to approach the guests and offer them a menu. If a visitor asks the waiter whether there are certain dishes on the menu, the waiter must clearly and understandably explain to the visitor what he wants. Thus, due to the small assortment, ordering in a summer cafe occurs as soon as the waiter brings the menu. With a small number of visitors, the waiter brings the ordered dishes within a few minutes. If a guest has ordered barbecue or another dish that requires cooking, then he waits at the table, at which time the waiter has the right to offer the client drinks and serve other tables. The bill is provided to the client after he has eaten and is about to leave. The waiter's task is to keep an eye on the table at all times, serve food and drinks on time, remove dirty dishes and change ashtrays. Summer cafes also include beach and park cafes. On the beach retail store equipment It may be simpler, less expensive, and its list is quite limited. In the recreation area of central parks and the busiest streets of the city, where people are accustomed to spending more time enjoying relaxation and food, a summer cafe will require both higher quality equipment and appropriate equipment - dishes, cutlery. The assortment of the simplest summer cafe is largely designed for impulse purchases. It could be juice, carbonated drink, ice cream. An indispensable attribute of a beach or park stall is a refrigerator for drinks and a chest freezer for ice cream. That's all there is to it. Traditional equipment of beach cafes is juice coolers.

1.2 Development of cafe culture in Russia

The tradition of drinking natural coffee brewed according to all the rules in a small cozy coffee shop existed back in the days of the Soviet Union. Usually this “bourgeois luxury” was enjoyed by tourists who came on vacation to the Baltic republics, Armenia, and Georgia. Then the Union collapsed, and coffee shops disappeared from the life of Russian residents, giving way to cheap instant coffee in the morning.

Since the second half of the 90s, public coffee drinking began to gradually return to everyday life, and today we can already talk about the revival of cafe culture in Russia.

The championship in the number of establishments serving variously prepared high-quality coffee belongs to Moscow. As throughout the world, cafes here became a haven for the most democratic-minded public: creative people and students. Moreover, the shelter is open 24 hours a day. It’s impossible to believe that a year and a half or two ago, getting a more or less acceptable “night lunch” was problematic. Even today in Europe it is difficult to find an establishment where you can eat after 10 pm. And in Moscow at this time many are just getting ready to have dinner. The capital is increasingly becoming a night city, so dinner starts late in the evening and ends early in the morning. Among today's youth, the concept of "after party" has become relevant: visitors to nightclubs, before heading home, are not averse to relieving emotional excitement with a cup of coffee or even an early - at four or five in the morning - breakfast, served in a calm, cozy atmosphere. In expensive nightclubs, young people, as a rule, do not eat: firstly, it is expensive, and besides, food is an obstacle to ease while dancing. But there are other clients: the staff of the same nightclubs, who, having finished work, go to the nearest cafe to refresh themselves. A separate small group consists of random visitors waiting for the metro to open, rejected lovers or women on the verge of a nervous breakdown.

During the entire period of their existence, there have been no incidents with aggressive visitors in Moscow night cafes. Apparently, the process of eating food and a cup of coffee calms the soul at any time of the day.

Our coffee culture is not developing as quickly as we would like. According to foreign experts, there cannot yet be many coffee shops in Russia, because, firstly, the appropriate culture of coffee consumption, and indeed eating out in general, has not yet developed, and secondly, due to the lack of money supply among the population. While any American can afford to go to coffee shops three or four times a day and drink a cup of coffee, in Russia this is not accessible to everyone.

The coffee industry has noticeably intensified over the past two years, and many have decided to take up this business. This is a good trend that says that everything larger number People, especially those who work a lot and are extremely time-poor, are accustomed to visiting coffee shops to relax and socialize with friends outside the home.

The current situation in the restaurant business. The restaurant business in Russia today exists in three niches, unequal in volume and number of players - fast food, mid-price restaurants and haute cuisine restaurants. In the fast food segment today, McDonald's undoubtedly dominates - due to the advantages of early entry into the Russian market, rejection of the franchising scheme (in other countries, McDonald's usually opens its restaurants as a franchise) and a well-established system of personnel development within the company. By all accounts, McDonald's main competitor today is the Rostix chain, owned by the Rosinter company. Expensive signature restaurants of haute cuisine, “haute cuisine”, began to appear in Russia already in the late 80s - early 90s of the last century: associated with the names of Arkady Novikov, Andrei Dellos and other stars, they stood (and continue to stand) comparison with boutiques. The most notable signature restaurants today are “Pushkin” and “Syr” by Novikov, Le Duc and “Shinok” by Dellos, “Beehive” by Oleg Bardeev, “Oblomov on Presnya” by Anton Tabakov, “Absinthe” by Igor Bukharov. The average price niche in Russia is not only not overpopulated, but also not fully formed - it is only obvious that the threshold for entering it is becoming higher every day, and the processes taking place within it are becoming more interesting. The dominant player in this segment today are Rosinter Restaurants (TGI Fridays, American Bar & Grill, Planet Sushi, Patio Pizza chains, etc.) All restaurateurs, regardless of the niche in which they position their establishments , today there is one common headache - personnel shortage. And, if the problem with hiring service personnel (waiters, sommeliers, room managers) today rests mainly on the significant excess of demand in supply, then in the case of management personnel for restaurants everything is much more complicated. The fact is that the number of competent restaurant managers today is very limited. There is almost no tendency to increase it now - in Russia there are no specialized educational institutions that would train specialists of this level. Restaurant directors now mostly grow up from waiters, room managers, even bartenders; they have little mobility and do not have sufficient opportunities for their further professional development. As a rule, the owner is already one step above the director, and it is simply impossible to take his place. As a rule, directors change their jobs extremely reluctantly. The fact is that restaurant owners sometimes use not entirely market methods to retain competent managers.

1.3 History of fusion style

Fusion (from English fusion - mixing, merging) is a mixture of different styles and trends in one interior design.

A style that allows you to place anything you want in space and at the same time create harmonious connections between mismatched objects and elements.

General characteristics of the fusion style. Offers everything without denying anything. He finds harmony where previously it seemed unthinkable. Fusion does not reject previous traditions, but coexists with them as if in parallel worlds, creating its own rules. This direction, in fact, opposes itself to minimalism - and brings us closer to complex and expressive “maximalism”. Uninhibited “hooligan chic” is in fashion - a style that develops the logic of collage and borrows any elements. The main principle of the fusion style is freedom of color and material. The main condition of the fusion style is that the shape, color and content of the designed interior are all that will later become its “filling”: finishing materials, furniture, decorative elements, - must at the final stage be combined into a whole organic living space. Fusion is usually referred not to architectural, but to designer styles- the connection between objects is formed not on a functional, but on an emotional level, and it itself is not based on clearly formulated laws, but rather is a way of thinking inherent only to a part of architects. This style burst into the new millennium, rapidly sweeping away ascetic minimalism, rational constructivism, and even postmodernism pretending to be romantic. By mixing clean styles and directions, like colors on a painter’s palette, fusion surprisingly quickly took root and became popular. The style of modern life in your interior - fusion (mixing everything with everything), arose as a result of the intersection of different cultures, traditions, times and even technologies. It all started with jazz in the 70s; progressive listeners switched to a special musical style that combined elements of European academic music and folklore from exotic countries. Then fusion conquered restaurants, appearing here in the form of traditional European dishes with Asian accents: this happened in the 90s, and fashionistas of that time with forced smiles ate Olivier salad with sea cucumbers and foie gras seasoned with cumin and turmeric. By the way, mixing experiments various cuisines peace did not always lead to worthy results. Culinary fusion died out at the experimental level, and the idea of mixing East and West, South and North transferred to interiors. Art historians say that the background to the emergence of this style in interior design most likely dates back to the 90s of the last century, when streams of exotic things from the East, Africa and Latin America. The United States is rightfully considered its homeland: it was the apartment designers there who were the first to decide on bold experiments and “crossed” classics with ethnics, and Empire with high-tech. At the same time, in fashion houses in Italy, France and Germany, luxurious carpets made of leopard and zebra skins appeared next to glass and metal tables and shelves. Small cubic leather sofas replaced large and fluffy luxurious American sofas, and the snow-white walls of postmodernism were full of bright sunny colors. Inspired by their first success, the owners of villas and mansions began to act more boldly. And now the design bureaus accredited by them are beginning to actively combine heavy classical furniture and high-tech organza curtains in one interior. Upholstered furniture moves out of the corners and occupies central place in the room, while expensive exclusive collections easily coexist with the most popular models. Nice family photographs and souvenirs brought from travels appear on the walls next to masterpieces of painting or sculpture. Features - an interior in fusion style is a subject of real decorative art, in which any genre is acceptable, except the boring one. It does not provide for clear horizontals and verticals, rigid definition is also alien to it, and connections between objects are formed not at a functional, but at an emotional level. Luxury with a touch of simplicity and bohemianism - precisely this combination of concepts, previously perceived as absurd - is becoming a trend in interior fashion. The style of the space involves a complex color scheme, many decorative details, an abundance of fabrics and a variety of decor, experiments with textures, staged lighting and carefully “organized” chaos. In no case should your interior give the impression of being thought out to the smallest detail: the charm of a maximalist style, like a person’s individuality, is woven from mutually exclusive things.

The fusion style is based on three pillars - color, texture, materials. Neutral or pastel shades are unusual for this style. From now on, your interior will be dominated by rich and even provocative tones, however, perfectly harmonizing with each other. These can be combinations of turquoise, crimson, gold and green. This could be a warmer range of red, orange combined with an inky blue tint. Interesting compositions of violet-lilac paint and polar black and white are acceptable. However, it is very important not to make a mistake in choosing the ratios, not to overdo it, otherwise, instead of an exquisite palette, you risk getting a banal set of “flashy” colors. Once you've decided on a basic color scheme, you'll need to decide how you'll present such a bold color show. There is one radical way, widely known to theater decorators - spot lighting. That is, instead of using multi-armed chandeliers to highlight the multi-colored splendor at full power, you need to think about organizing the lighting so that each element included in the system creates its own mini-show - intimate and pathetic at the same time. Lamps can be located along the lower eaves of the wall, almost near the floor. They can work as spot ceiling or wall spotlights, highlighting different elements of the interior each time. You can actively use floor lamps, sconces, desk lamp, furniture lighting (both overhead, on tops, and built into cabinets). Fusion even admits that not one of your lamps will be similar to another, but every time you turn it on, or combine different lighting options, you will create a new decoration, original and unique. You can “play” on the contrast of non-standard materials of lighting fixtures, contrasting colors or create a composition from lampshades of different shapes. Candles (and ideally a fireplace) do not so much illuminate as they create an intriguing, mysterious twilight, modeling additional nuances of mood. And this mood will always be major and romantic. As for the texture of finishing materials, the idea of fusion suggests that your interior will be perceived in harmony of visual and tactile sensations. Therefore, touching the upholstery of upholstered furniture, the fabric of curtains, and simply the walls of your home, walking on its floors, carpets, should be as pleasant as looking at them. In this regard, it is better to abandon cold and slippery glossy surfaces, giving preference to those textures that are most characteristic of living nature: silky textures of fine sea sand, roughness natural stone, the coarse weave of linen yarn, homespun canvas, the elasticity of natural leather. The animalistic trend is very current. Skins made from animal skins (or their imitations) fit so organically into the fusion that they are almost textbook objects for developing this style in the interior. Speaking of animal skins, we smoothly move on to the materials that fusion gravitates towards. We hope you have already guessed that you are practically unlimited in the choice of these materials. The most natural and natural materials will certainly add a special chic. So, in particular, the classic one will look quite interesting expensive furniture framed by rough, peasant log walls. Gold and silver against the background of a spruce baluster will not seem like alien elements, but only a cheerful and stylish improvisation. And the presence of a fireplace with an adobe chimney will be very appropriate in the living room, where the walls are draped with silks matched to the same clay. By the way, drapery is one of the main fusion tools. Perhaps there is no other style that would allow such an abundance of fabric in the interior. This is understandable. Numerous curtains, muslin curtains, heavy drapes, alcove curtains, pillows, carpets - these are all those elements that were destined to bring the interior to a common harmonious denominator. With a fairly limited budget, fabric can become that lifesaver that will instantly transform your home. Moreover, textiles can transform any neat and prim interior into quite “hooligan” and bold apartments. An abundance of free space, the presence of white planes and a lot of daylight - these are the mandatory attributes of the fusion style. Architects consider the ideal condition for creating an interior in this style to be housing oriented to several cardinal directions at once.

When creating an interior in a fusion style, you should remember:

Rule #1. It's better not to mix. The main tenet of fusion: less is better than more. Things are designed to emphasize and highlight each other, and not to clutter up your square meters.

Rule #2. Remember good taste. It is he who should come to your aid if it suddenly seems that the notorious samovar will fit perfectly into the interior of your bedroom in the style of Louis XIV.

Rule #3. Don't make a fuss. The ability to combine things is comparable to meditation. Stand in the center of the room, close your eyes and imagine what you would like to see before you act. Fusion is, first of all, Feng Shui, and not the chaotic Brownian movement of objects in space.

Rule #4. Fusion loves boldness. Go for it! General design apartments - strict, straight-perpendicular, metallic-glittering high-tech? And in it... the entire toilet is gilded and scarlet velvet, where instead of a flush handle there is a deer antler, on the wall there are tapestries and a shelf with expensive alcohol. It looks wild, but the shocking element in this case will most likely play into your hands - the guests will be stunned. Especially if you cover this Scarlett-Okharov luxury with a modest dark door.

Fusion cannot be called an expensive style of interior design. The main thing in the fusion style is a sense of proportion, and it is the most faithful ally of economy. What you will definitely have to spend money on when creating the interior of your apartment in a fusion style is leveling the floors and textured ceilings, purchasing several types of wallpaper and compatible paint colors. Designers unanimously believe that the fusion style is most suitable for the soft, even rounded shapes of the ceiling box, arched openings, big windows. Architects also like to play with a combination of different textures, sophisticatedly combining polished and rough surfaces, fabric and paper wallpaper, and wood of different species. Fusion has made possible an interior in which luxury naturally transitions into simplicity and bohemianism. A person who chooses fusion will not have to think about the purity of the style. In this style, you are free not to adhere to any canons or dogmas.

Devoid of standards and stereotypes, a dizzying, luxurious and at the same time bohemian interior can and should become the result of your personal creativity. The hooligan style will strike fear into indecisive people: is it too bright and catchy? Stiff rationalists will find it overly emotional, intrusive and disturbing. “Conservatives” will find it strange and even frivolous. This direction of interior fashion is designed for people who are leaders, relaxed, not afraid of change, who do not tolerate restrictions and have a large supply of internal freedom. Only a person internally free from “materialism” will not be afraid to emphasize redundancy and excessiveness for self-expression. Focusing only on his tastes, paying tribute to his own preferences, recognizing his small or large weaknesses, he follows the main rule of modern life: gray everyday life must turn into a bright, memorable holiday, carnival, show - for which decent scenery is needed.

Chapter 2. Features of architectural and artistic style

2.1 Design technologies for creating a cafe design project

Design technology for creating a cafe design project - a design project - a set of works carried out by specialists, aimed at designing and creating a specific living environment, characteristic and suitable for a specific Customer.

A design project consists of a set of documents developed during design work(in accordance with the technical specifications), to the extent necessary for carrying out construction, repair, finishing and assembly work at the site. Work on the project consists of three main stages: planning stage, style stage, technological stage.

Interior design should not only be a means of self-expression. This is, first of all, the fruit of the collective creativity of architects and designers with the customer. In this case, the result of the work will meet his expectations and perform all the required functions necessary for comfortable life and work.

Design stages:

1. Planning. Includes: taking measurements of the existing wall configuration; studying the features of the design object; zoning; development of planning solutions. Required Documentation: room layout; dismantling plan; plan for the construction of partitions; furniture and equipment arrangement plan; explication of premises. Before starting work on planning a room with furniture arrangement, you need to decide on the amount of furniture you need in each room separately. That is, draw up technical assignments for the project. After this, having agreed on style priorities and budget, select furniture for showrooms or talk with furniture manufacturers to clarify basic sizes and configurations. A planning decision is, first of all, answers to the questions: “How will the premises work, where will everything be, where will the doors be, how wide will the passages between the furniture be.” At this stage, several fundamentally different planning solutions are initially proposed, maximizing the potential of the space. The customer is invited to carefully consider them, “trying on” all possible life scenarios. Imagine how he will enter, put things down, see off guests, eat, work, relax, etc. in each of the proposed layouts. The final solution is usually based on one of the proposed options or a combination of them. After approving one of the planning solutions, the Customer endorses it with his signature, and we move on to the second stage of the project.

2. Style. Includes: volumetric modeling of premises; development of three-dimensional graphic and color and texture options for artistic solutions. At this stage we answer another question: “What will the premises look like?” The scheme is similar to the first. Technologically, this can happen in two ways; first - first a pencil sketch, after approving it - computer model; the second is just a computer model. Which option to choose is up to the designer to decide, based on the complexity of the space being designed. Warning! Curtains, upholstered furniture, other items and interior details not designed by the Contractor, etc. On a computer model, rooms, due to the complexity of their modeling, are sometimes shown schematically. It is also necessary to understand that a computer model does not give a 100% idea of the color scheme in the future room. It is also not possible to display real materials (upholstery, tiles, curtains, parquet, linoleum, wallpaper, etc.), due to the lack of textures and the difficulty of transmitting colors when converting files (for example, when outputting from a scanner or digital camera). Color distortion is also possible when outputting an image to a printing device.

The decoration and design of the cafe is something amazing and unique, which creates a special atmosphere of coziness and comfort, promotes a good mood and communication with friends and family, as well as simply a pleasant pastime. Undoubtedly, the high-quality design of the cafe will allow it to turn into a favorite vacation spot for energetic and purposeful people of absolutely any age. This is exactly the kind of interior design that creates such an atmosphere that any successful cafe should have. The success of an enterprise of this type very much depends on a comfortable environment, on its originality and uniqueness.

When developing a cafe project, you should take into account a huge number of factors, among which the following deserve special attention:

Consumer orientation, that is, a clear image of the future potential visitor to the cafe;

Development of a thoughtful and original concept for the establishment;

Development of the project in such a way that the interior of the cafe corresponds to the chosen concept and image of the potential client;

Clear layout and design of the premises.

The concept of the establishment and the interior of the cafe - first of all, when developing the concept of the cafe and thinking about the design, you should pay attention to the cuisine that you are going to offer to your visitors: either it will be European cuisine, or Japanese, or maybe it will be ordinary fast food .

We must remember that the interior of a cafe should stand out favorably among the dullness and monotony of most urban catering establishments. It should be memorable, bright, unique, and therefore you should take great care of the unique design. In this matter, you can use (this is highly recommended) the services of professionals. It is very important to choose a design so that everything is provided - and big kitchen, and beautiful, comfortable furniture and a good color and texture solution. In addition, in order to ensure coziness and comfort in the establishment, you should think about lighting. And we should not forget about the external appearance of the establishment, because without seeing the beautiful “wrapper” the visitor may simply pass by and not notice your “best” establishment of its kind. What the interior will be like is largely determined by the target visitors. And of course, it is necessary to take into account the location of the cafe, because I think you will agree that a cafe in the center and outside the city can differ significantly in its design. And finally, I would like to recommend sticking to one chosen style - mixing styles is, as they say, “bad manners”.

Design technology for creating a cafe design project is a set of works carried out by specialists, aimed at designing and creating a specific living environment, characteristic and suitable for a specific Customer.

The design project consists of a set of documents developed during the design work (in accordance with the technical specifications), to the extent necessary for carrying out construction, repair, finishing and assembly work at the site. Work on the project consists of three main stages: planning stage, style stage, technological stage. Interior design should not only be a means of self-expression. This is, first of all, the fruit of the collective creativity of architects and designers with the customer. In this case, the result of the work will meet his expectations and perform all the required functions necessary for a comfortable life and work.

3. Technological. Includes: development of an electrical plan; development of a basic diagram of water supply and sewerage; development of a basic diagram of air conditioning and ventilation; execution of sketch drawings of structures; tile layout (without technological gaps; development architectural elements registrations, if available.

Documentation issued: plan for placement of lamps and distribution of lines among switches; layout plan for sockets, electrical outlets and low-current network outlets; schematic diagram of water supply and sewerage; schematic diagram of air conditioning and ventilation; diagram of wall layouts and placement of structural elements, layout of walls and structures; floor plan; schematic diagram of the floor section if necessary; ceiling plan; schematic diagram of a section of ceilings; summary finishing map; furniture selection map; specification on the door. At this stage, issues related to the implementation of the project are resolved.

Utilities, materials, structures, and technologies are designed and selected to bring the style solution to life.

Based on the technical specifications, capabilities and wishes of the Customer, various cost options are considered, from which the optimal solution is then selected. Suppliers of components and materials are selected (if there is an agreement for this service). As a result, having gone through all three stages, we come, in fact, to the result of all the work - a formalized design project - a set of documents necessary for the implementation of the object.

Modern trends in cafe interior design - for a long time, owners of bars, cafes and restaurants have sought not only to feed their visitors delicious food, but also to provide them with a comfortable and pleasant environment for relaxation. Today, when visiting a cafe or similar establishment in other cities, the visitor pays attention, first of all, to the style of the establishment and its interior design.

Style is usually defined as an artistic community inherent in a specific interior design. Modern public catering establishments, designed for people to have a pleasant time, are extremely demanding in terms of design. Often this is always a search for something exclusive, the embodiment of an original author’s design to attract a regular circle of clients.

Today there is a tendency to mix different styles and design trends when decorating the interiors of restaurants or cafes. But the defining moment for the visitor should be a feeling of comfort coupled with the internal thoughtfulness of all the details. And, in addition, the purpose (specificity) of the institution is also important. Thus, for a pizzeria, the design project of an Italian restaurant is traditionally used as a basis. If this is a restaurant serving ethnic or exotic cuisine, a design of a national character is created.

The classic style, which is characterized by simplicity, naturalness of form and strict adherence to the principles of proportionality, is always relevant. Catering establishments with an interior in the Rococo style, where the emphasis is on rich decor and highly artistic accessories, are popular. There is a return to fashion of the Art Deco style, characterized by light and elegant decor. The design ideas of Art Nouveau are very interesting, where sinuous and smooth outlines predominate, and there is a tendency for asymmetry in combination with natural and plant motifs of furniture decor.

At the peak of popularity is the Mediterranean style, which has become fashionable thanks to the popularity of healthy seafood cuisine. Restaurants in this style are distinguished by their brightness and riot of colors, as well as a special airiness of the interior due to the large windows letting in the sea of sun. The Mediterranean style of the restaurant interior is characterized by a certain roughness, emphasized by the texture of the walls and the “man-made” nature of their decoration and painting.

No less interesting are the designs of restaurants or cafes in oriental style. These interiors are distinguished by a special ethnic atmosphere. Original furniture with refined and laconic lines, natural tones, some asymmetry and natural fabrics - all this helps to create a living simplicity that is so lacking in the modern high-tech world.

A successful idea for decorating a restaurant or cafe and an exclusive style, along with excellent cuisine, are increasingly becoming the hallmark of the establishment. Original interior design is a guarantee of the uniqueness of the restaurant (cafe), its prosperity and demand.

The interior of a cafe should not be confused with the interior of a restaurant - they are not the same thing. cafes should not be busy; every visitor should feel light and relaxed. Before you start decorating a cafe, look through various catalogs that present design ideas for decorating a cafe, and highlight those moments that make these leisure establishments feel light.

Cafes are establishments that visitors prefer to visit in the morning and afternoon. At this time, natural light will almost always be sufficient to illuminate the room, but only if correct layout cafe, and the access of light is not limited to small windows. In almost all photographs, the interior spaces are illuminated sun rays that penetrate through large windows. And only occasionally you can see cafes in which twilight reigns, but this cannot be considered a disadvantage, all these are design ideas according to which the cafe should set its own individual emotional tone.

The interior of the cafe should be planned before you start decorating. Everything in the room should be executed in the same style, from which nothing should stand out, and the same ideological line should be traced in all interior items.

Among modern cafes, there are a lot of establishments in the Art Nouveau style, which is characterized by smooth lines and flexibility of forms. The interior of a cafe in the Art Nouveau style cannot do without images of flowers and plants, the designs of which can be seen everywhere: on the floor, on the walls, on chairs, tables, even on dishes and cutlery. Come up with an original idea for your cafe and turn it into reality.

Art Nouveau is an abundance of patterns and a variety of shapes, so for a cafe in this style, stucco molding, embroidered fabrics, stained glass, and fancy images are relevant. Wall lamps are used as lighting fixtures. The lamps in them should be hidden behind matte shades, thanks to which the light becomes soft and soothing. These lamps must be unusual. Various decorative details can be used to decorate them.

An excellent option for a cafe - romantic style. When creating a romantic cafe, the main thing is to choose the right color scheme. Should be used pastel shades. Only one color should be used in this style. If several colors are selected, then the transition from color to color should be very smooth. It is better to use antique options as furniture; tables should be covered with tablecloths with small floral patterns.

The younger generation prefers to have cafes decorated in a minimalist style. Minimalism is a rather old trend that for a long time no one paid attention. The reason for this may be the severity of this style, which calls for abandoning the clutter of objects, while making the room as functional as possible. Such cafes amaze with their spacious, half-empty halls. Only small-sized furniture is used for decoration. The entire room is being finished light materials. When designing the interior of a cafe in the minimalist style, you should remember that the space of the room cannot be cluttered with accessories, so the best option would be paintings that will be inserted into frames of the correct shape. Frames need to be chosen from a material that will fit into the interior of the cafe.

A children's cafe is something that more than one city cannot do without. Best option The design of such an establishment is like a fairy tale. You can choose any fairy tale, the main thing is that it is kind and that children like it. If everything is done correctly, believe me, children will happily visit the cafe and parents will not be able to deny them this pleasure. When choosing furniture for a children's cafe, remember that it will be intended for children. Furniture can be purchased different sizes. The smallest tables will be comfortable for small children to sit at, while larger furniture will suit older children.
