6. Place one teaspoon of sugar in each square. Then we begin to form an envelope, fastening each corner to the center.

Ingredients:

  • Flour - 200 gr
  • Butter -100 gr
  • Cottage cheese - 100 gr
  • Sugar - 2 tablespoons
  • Cinnamon - 0.5 teaspoon

1. Add sugar, cinnamon, baking powder and salt to the flour. Mix everything.

Cooking method:

  1. Melt the butter in a water bath and leave to cool.
  2. Place the cottage cheese in a bowl, mash the mixture with a fork to remove lumps, then beat with the egg, sugar, butter, soda and cinnamon.
  3. Be sure to sift the flour, gradually knead the dough, roll into a ball, and let it rest for 1.5 hours.
  4. Sprinkle a little flour on a flat and clean surface and roll out a layer 0.5 cm thick.
  5. Cut out round pieces, sprinkle each with sugar, fold in half, repeat the last 2 steps again.

It is very aromatic, with a crispy crust and a soft center. They are also called “kisses”.

Ingredients

  • Cottage cheese – 250 gr
  • Butter - 200 gr
  • Pinch of salt
  • Flour - 500 gr
  • Sugar for sprinkling

Preparation

Mash the cottage cheese and butter with a fork in one bowl. You can also use a blender for this purpose.

Add some salt.

Sift the flour and add it to the cottage cheese.

Knead the curd dough and place it in the refrigerator to set for half an hour.

Using a glass or mold, cut out circles.

Dip one side of the circle in sugar, then fold the circle in half so that the sugar is inside. You will get a crescent moon.

We will also dip one side of this crescent in sugar again and fold it in half again, with the sugar inside.

Preparation

Place cottage cheese in a bowl. If the cottage cheese is very grainy, first rub it through a sieve.

For more flavor, grate the zest from half a lemon.

Grind everything with a blender until smooth.

When the curd mass is ready, set it aside.

Sift flour with baking powder into a separate bowl. Place the butter in the freezer for a few minutes ahead of time until it becomes hard and easy to grate.

Rub this block of butter on a coarse grater directly into the flour.

Mix butter and flour. You should get floury, heterogeneous crumbs. We combine it with the curd mass and knead the dough.

We try to knead the dough quickly so that the butter does not melt.

The kneaded dough should not stick to clean hands. We place it in a plastic bag and put it in the refrigerator for 20 minutes to brew.

After this time, the dough needs to be taken out. Pinch off a fragment from it and form a bun.

Roll out the bun into a thin cake. Using a mold or glass, squeeze out circles. These are our future cookies.

Then fold the circle in half so that the sugar is inside. Dip one side of the semicircle into sugar again.

Fold the semicircle in half again so that the sugar is inside. And now we’ll dip one side of this small triangle into sugar again.

Place the triangle on a baking sheet with the sugar side up and, to give it the appearance of a goose foot, make two small cuts.
