1. How to make meatball soup

Cooking it is no more difficult than ordinary soups with meat products, and perhaps even faster.

Despite the fact that this first course has quite a lot of various combinations of ingredients, they are all basically prepared according to the general principle of preparation.

First of all, chopped vegetable mixtures or individual raw vegetables are dipped into boiling water or broth. After boiling again, potatoes are added.

A couple of minutes after the next appearance of gurgling, the fire is reduced and the meatballs are lowered into the broth. After about 10 minutes, add your favorite ingredients as desired, and after another 5-10 minutes the soup is completely ready.

Only for greater richness of taste it is left to simmer and brew under the lid for a few more minutes.

The soup is served with regular herbs, sour cream, croutons or any other family favorite additives.

But this is more of a dietary cooking principle that is used in the kindergarten menu.

Consider a recipe for a classic meatball soup with a richer flavor.

Ingredients:

  • Water – 2 l.
  • Potatoes – 2-3 pcs.
  • Minced meat – 250 gr.
  • Onion – 2 pcs.
  • Egg – 1 pc.
  • Carrots – 1 pc.
  • Sunflower oil – 2 tbsp. l.
  • Bay leaf - 1-2 pcs.
  • Salt, pepper, herbs - to taste

Preparation:

1. Grate 1 onion and mix with minced meat, raw egg, salt and pepper. You can add your favorite spices.

2. From well-kneaded minced meat, roll into balls approximately three centimeters in diameter.

To ensure that the minced meat does not stick to your hands and the balls are of the correct shape, you need to wet your hands in cold water.

3. Grate the peeled raw carrots on a medium grater. This will give more flavor

5. Pour sunflower oil into a hot frying pan and, as soon as it warms up, put chopped onions and carrots into it for frying.

It is best to place a pan of water on the stove before you start preparing the vegetables, so as not to waste time. By the time the vegetable dressing is ready, the water will already boil.

8. When our soup base begins to boil, watch for the starch-meat foam that appears and immediately remove it so that the broth turns out clean and beautiful without floating dark pieces. As soon as the foam stops appearing, cook the soup over medium heat for 15 minutes.

9. Add fried vegetable dressing and bay leaves. Salt and pepper to taste.

10. Cook the soup until the meat balls and potatoes are completely cooked.

11. Chop your favorite herbs and add them to the soup at the end of cooking.

12. After turning off the stove, cover the lid of the pan with a towel and let it sit for 10 minutes to enhance the flavor.

3. Grind your favorite greens. It can be dill alone, or a mixture of feather onions with parsley and dill.

4. Add half of the cooled fried onion, a raw egg, and most of the chopped herbs to the minced meat. Add salt and pepper to your taste and mix well.

The better you knead the minced meat, the less the meatballs will fall apart in the minced meat.

5. Form meatball balls using a spoon, rolling them between your palms.

6. We clean the pepper from the insides and the cap with the tail, wash it well and, if it is small, then whole, and if it is large, then cut half of the pepper into cubes.

7. Grate the peeled carrots, cut into small cubes or chop into small strips - at your discretion.

8. Add chopped carrots to the remaining onions in the pan and fry until the carrots are half cooked.

9. At the end of frying the vegetables, add pepper cubes. And simmer under the lid for a couple more minutes.

10. Carefully lower the meatballs into the broth (or water) that has boiled in a saucepan and let them cook for about 5 minutes.

Don't forget to remove the meat foam!

11. Meanwhile, chop the peeled potatoes into slices or cubes.

12. Dip potato pieces into the broth, add salt to taste and cook for about 10 minutes.

13. Transfer the fried vegetable dressing into the soup and cook for another 5-10 minutes until done.

14. Sprinkle the remaining chopped herbs into the soup poured into portioned bowls.

2. Meatballs for soup

Juicy meatballs can complement any soup: vegetable, meat, cereal or even fish (but in this case, minced fish is used for them).

The main thing in these homemade meat balls is to cook them correctly so that the tenderness and juiciness of the minced meat is preserved. After all, very often store-bought meatballs in homemade soup look like tasteless, shapeless lumps.

The secret to delicious meatballs is that you don’t have to stuff unnecessary ingredients into the minced meat!

You can use minced meat to suit your taste, as long as it is fresh! But meatballs made from mixed triple minced meat (pork with chicken and veal) acquire the greatest softness, juiciness and taste, but do not overdo it with twisted fat so that the soup does not become covered with an unpleasant greasy film when cooling in the plate!

If you decide to use meat balls in pea soup, then for a richer taste it is advisable to twist a piece of raw smoked meat into the minced meat. This will give a certain piquant note of aroma.

For juiciness, as in cutlets, it is better to add chopped onion to meatballs. It will practically not be felt when eating, but the consistency and aroma of the balls, as well as the entire soup as a whole, will improve significantly.

As we have already seen above, you can use either fresh or fried onions in minced meat - this will not spoil anything in the aroma and richness of the broth.

The egg helps to achieve a minced meat consistency such that even with careful stirring during the cooking process the balls will not fall apart. But it is not necessary to add it - this, as they say, is at the request of the hostess. To achieve a similar effect of “strength” of meatballs without an egg, it is enough to twist the meat in a meat grinder twice and “pop” the minced meat very well so that all the excess air is released and a homogeneous mass is obtained.

To prevent the meat lumps in the soup from seeming a little bland, when making them, it is advisable to add a little salt and lightly pepper.

The addition of bread crumb or one tablespoon of semolina per 0.5 kg of minced meat adds special tenderness. But to do this, you need to add a couple of spoons of broth and let the minced meat stand for 10-15 minutes so that this component swells well, absorbing the meat juice.

To save time on cooking in the future or if you have a lot of minced meat left over, you can roll out meatballs and freeze them in the refrigerator.

It is worth paying attention to such a controversial point as the time of lowering the meatballs into the soup: first or after all the other ingredients?

  • Water – 2 l.
  • Minced meat – 300 gr.
  • Potatoes - 3 pcs.
  • Vermicelli “Gossamer” - 4 tbsp.

  • Semolina – 1 tbsp. l.
  • Salt, black pepper, spices, herbs - to taste.

Preparation:

1. Finely chop both onions.

2. With half the onion mass in a deep bowl, mix the semolina well, 0.5 tsp. salt, favorite spices, 1 tbsp. l. water and minced meat. Set the well-kneaded mass aside for 10 minutes so that the semolina in the meat mass has time to swell.

3. Grate the carrots on a medium grater and, together with the remaining half of the finely chopped onion, sauté in sunflower oil.

4. Chop the potatoes into cubes or slices and place them in boiling salted water for 10 minutes.

5. Beat the minced meat thoroughly again with your palms and form balls, which we lower into the water with the half-raw potatoes.

6. After 5 minutes, add the vermicelli and vegetable dressing to the soup and cook until tender.

For more richness, you can add Maggi or Galina Blanca meat cubes to the soup 3-5 minutes before it is ready, and after cooking, let it brew for another 5-10 minutes before serving.

If you use raw rice, it will absorb all the meat juice when cooking the soup and the meatballs will turn out dry. If you boil the rice until cooked, then when you boil it again as part of the meat balls, the rice will lose its shape and the meatballs in the soup may spread out.
It is better to use boiled, round rice. Rinse the rice thoroughly under running water until the drained water becomes clear. Fill with water 1:2 and put on low heat.

2. After the water boils, boil the rice for another 1 minute and turn off the heat.

3. Leave covered for 10-15 minutes. The rice will absorb all the moisture, but will remain whole and undercooked inside. Let it cool down.

4. Peel the onion, wash it and cut it into very small cubes. If desired, you can use a coarse grater.

5. Transfer the minced pork and beef into a deep bowl, break 1 egg, add chopped onion. Salt and pepper.

6. Add cooled rice.

7. Mix everything.

8. Form meatballs. Scoop the minced meat with a teaspoon and roll small balls with a diameter of 2-3 cm with hands moistened with water. Place them on a plate or board covered with cling film. Ready-made meatballs made from minced pork and beef can be stored in the freezer for another 1-2 months. If you are going to often cook delicious soup with meatballs, you can make preparations: put the meat balls into portions in bags and hide them in the freezer. This will save a lot of time next time.

9. Peel the potatoes, wash them and cut them into small cubes.

10. Fill it with cold filtered water, add 1 bay leaf to the pan. Place on medium or high heat.

  • broccoli or cauliflower - 100 g
  • olive oil - 2 tbsp. spoons
  • parsley - 3 - 4 sprigs
  • salt, pepper - to taste

Preparation:

This soup can be prepared not only with individual fresh vegetables, but, for example, in winter, you can also use a frozen vegetable mixture with a similar composition of ingredients.

1. Cut one small onion into small cubes and add it to the minced meat, which should also be salted and peppered. Mix everything thoroughly and form small meatballs. Cover them with cling film and put them in the refrigerator.


2. Cut the remaining onion into small cubes and fry in oil for 5 - 7 minutes over low heat until slightly golden brown.


3. Peel the carrots and grate them using a Korean carrot grater, or cut them into small cubes. Add to the onion and fry everything together for 2 - 3 minutes.



4. Peel the potatoes and cut into small cubes.


5. Bring the broth to a boil and add chilled meatballs to it, which should be removed from the refrigerator. Cook for 5 minutes, then add potatoes and fried vegetables, salt the broth to taste. Cook for another 10 minutes.

The broth can be used for both meat and vegetables. But you can also cook soup in water. Meat and vegetables will saturate the broth with their flavors, and it will turn out not only nourishing and tasty, but also aromatic.

6. Remove the tails from the green beans and, if there are any, the hard vein connecting the two halves. Wash broccoli or cauliflower and beans thoroughly. Add the vegetables to the broth and cook everything together for another 10 minutes.

Potatoes can be replaced with zucchini.


7. Wash the greens, dry, chop and add to the soup. If desired, add pepper and bay leaf to it.

8. Remove from heat and let stand for 10 minutes with the lid closed.

We will need:

  • minced pork - 300 -350 g
  • egg - 1 pc.
  • fresh cabbage - 1/4 of a head of cabbage
  • onion - 1 pc.
  • carrots - 1 pc.
  • potatoes - 2 pcs.
  • frozen green peas - 3 tbsp. spoons
  • flour - 2 tbsp. spoons
  • vegetable oil - 3 tbsp. spoons
  • salt, pepper - to taste
  • bay leaf - 1 pc.
  • greens - for serving

Preparation:

1. Add egg, salt and pepper to the minced pork and mix everything thoroughly until smooth. Form the minced meat into meatballs and roll them in flour.

2. Pour oil into the multicooker bowl, turn on the “Fry” mode and fry the meatballs for 5 - 7 minutes.

3. Peel the vegetables. Cut the onion into small cubes, the carrots into medium cubes, and the potatoes into large cubes.

4. Add onions and carrots to the meatballs and simmer for 5 minutes.

5. Then add potatoes and green peas, salt and pepper. Pour in 1.5 liters of hot water.

6. Close the lid. Set the “Extinguishing” mode for 1 hour.

7. 10 minutes before the end of cooking, add chopped cabbage and bay leaf. If desired, add salt and pepper to taste.

8. Serve with chopped herbs. Eat with pleasure.

This soup is more considered a children's soup, and when you have kids, you probably have a slow cooker. Personally, she simply saved me. You pack some food and go for a walk with your baby. We come back hungry, and everything is ready, fragrant and hot.

So, in this recipe we do not fry the vegetables, so again this is a children's dish.


Ingredients:

  • 4 potatoes
  • Half a kilo of minced meat
  • 1 onion
  • 1 carrot
  • 1 tomato
  • A little butter
  • 2 cloves garlic
  • Basil, dill
  • Water 2-2.5 l

Add a couple of cloves of garlic, pepper and salt to the minced meat.


We will cook the soup immediately with the herbs. It is important to add it at the very beginning, and not at the end, the taste depends on it.

We cut vegetables and herbs.


In a slow cooker, everything cooks at the same time!

If this dish is cooked over a fire, then the vegetables are added in order.

Add vegetables and sprinkle with basil and other spices.


And here we add butter, which will give the broth a creamy, delicate taste.


You can add tomato and tomato paste.

Fill everything with water and set the mode. I call it “Soup”, there is also a “Cooking” mode.


Any minced meat is suitable. You can mix beef, pork and lamb (if available). Chicken is more dietary, and if your husband is a hunter, then cook it from venison or elk. By the way, I was treated to soup made from this kind of meat, it seemed that it was a little tough, but I didn’t notice much difference with the types that had already been tried.

Soup with meatballs and vermicelli

To increase the nutritional value, add vermicelli or pasta to this soup. I don’t accept pasta in them, and always replace it with noodles, vermicelli, pasta or spider web. But they are indicated in the recipes.

By the way, this recipe is very close to Italian. And, if you freeze vegetables, then this habit will be very useful for you.


Ingredients:

  • Chicken broth 2 l
  • 2 carrots
  • Bulb
  • Tomato
  • 3 potatoes
  • Green beans
  • One bell pepper.
  • Pasta, pasta, durum wheat noodles


For the meatballs:

  • 500 g beef
  • 1 onion
  • 1 egg
  • 2 tbsp semolina
  • Bunch of parsley
  • 3 tablespoons grated cheese
  • Basil, salt and pepper


1. We make meatballs: grind the meat in a meat grinder into minced meat along with onions, then add egg, semolina, spices, chopped parsley and grated cheese to this mixture.


2. Now we form balls, as in the photo. We wet our hands with water so that the meat does not stick and roll into balls or squeeze out even pieces through our fingers.


3. Now we prepare the soup itself. First, fry the vegetables (onions, tomatoes and onions) in heated vegetable oil.


4. Pour potatoes into a saucepan with broth. After boiling, cook the potatoes for 1-2 minutes.


5. Then add pepper and chopped beans. Cook for a couple of minutes and add the frying.


6. We do not add frying in advance, because it contains tomatoes that contain acid. And she, in turn, does not allow the potatoes to cook until tender.

7. After boiling, add vermicelli or pasta.

8. Place the meatballs into the boiling soup.


9. You need to cook for another quarter of an hour.

For flavor, add a little garlic, a mixture of peppers, and chopped herbs into the broth.

Let the soup sit and then sprinkle the bowls with grated cheese.

The mass will become thick, satisfying and very aromatic.

How to cook delicious soup with minced chicken meatballs

Minced chicken is more affordable than mixed chicken. It can be mixed with pork and then you get a more tender mass. But not everyone always has pork on hand.

You can take ready-made minced meat, or you can make it from chicken breast, if it suits you like a children's menu.


For the meatballs:

  • 200 g minced chicken
  • Bunch of greenery
  • 1 egg
  • 1 tbsp. spoon of semolina
  • Salt, pepper

1. Add greens, semolina and egg to the minced meat. We wait until the semolina swells a little. It will make the meatballs more complete and tender. It will also allow dry chicken meat to retain moisture.


2. Cut the onions and carrots into smaller pieces and fry in oil.


3. Add potatoes and fry to the broth (you don’t have to fry the vegetables, add raw ones).


4. Drop the meat balls into the bubbling broth and reduce the power to medium, otherwise the broth will not be transparent and cloudy.


5. Pour vermicelli or “spider web” into the prepared soup.

This recipe is more masculine because the soup is thicker and more nutritious. Yes, and the simplest one. Anyone can cook it, a man, a teenager, or an inexperienced housewife.

  • Onions for minced and frying


1.Add potatoes to cold water and cook until boiling, then add washed rice.

3. The soup is cooked for five minutes and the meat ingredient is lowered into boiling water.

Potato soup with meatballs (with potatoes and vermicelli)

Potatoes and noodles don’t always go together, but that’s how they cook in our family. In general, soup without potatoes is somehow incomplete for us. It's like there's nothing to chew in it.


Ingredients:

  • 300 g minced meat
  • Water 2.5 l
  • 1 carrot
  • 1 onion
  • 2 potatoes
  • Vegetable oil
  • Salt, pepper
  • Pasta or vermicelli half a glass
  • 3 bay leaves


1. Let the water boil and then chop the vegetables: three carrots, and chop the onions and potatoes.


2. Pour a spoonful of vegetable oil into the frying pan and saute the carrots and onion cubes.


3. You need to add spices and salt to the minced meat. Very aromatic meatballs are made with cumin.

4. The finished balls must be lowered into boiling broth to prevent them from turning into porridge.


5. We are waiting for the meatballs to float, this means that it is the turn of the chopped potatoes. After boiling, add pasta or vermicelli. Importantly, we are not talking about cobwebs here.


6. If you have cobwebs, add them at the end of cooking, when the soup has not yet cooled down. This warmth is enough for her. If you boil it for even five minutes, it will turn into mush.

7. Then add the frying and cook it all for another 10 minutes on medium heat.

8. Add spices, peas, dried dill.


As a result, the ingredient composition of this soup can be changed at your discretion and to the taste of family members.

Children will be interested in finding multi-colored or shaped pasta in the plate.

You can add a stirred egg to it at the moment of boiling at the end of cooking. We call food with this additive “soup with clouds.”

The main thing is that the temperature is such that the protein has time to coagulate.
